Wenn Du schon einmal in Portugal warst, dann kennst Du sie bestimmt. Die kleinen Blätterteigtörtchen mit ihrer cremigen Puddingfüllung. Außen knusprig, innen zähflüssig weich.

Pastéis de Nata – Portugal’s most famous delicacy!

If you have ever been in Portugal, you definitely know them. The little puff pastry tartlets with creamy custard filling. Crispy on the outside, thick and smooth on the inside.
One bite and the crave for them is real!

In the following, you will find the ultimate Pastéis de Nata recipe to satisfy this crave also at home!

Zutaten:

300g Blätterteig
250g Milch
150g Zucker
75g Wasser
30g Mehl
4 Eigelb
3 Streifen Zitronenschale
1 Zimtstange
½ Vanilleschote

Zusätzlich:

Pastéis de Nata Backförmchen (ersatzweise: Muffin-Backform)

Zubereitung:

  • Heize den Backofen auf 250°C vor.
  • Mische den Zucker und das Wasser in einem Topf.
  • Erhitze die Mischung langsam bis sich der Zucker vollständig aufgelöst hat.
  • Lass das Zuckerwasser 3 Minuten kochen, sodass ein dickflüssiger Zuckersirup entsteht.
  • Mische das Mehl mit etwas kalter Milch und erstelle eine klumpenfreie Masse.
  • Bringe die restliche Milch zusammen mit der Zimtstange, der Vanille und den Streifen der Zitronenschale in einem Topf zum Kochen.
  • Nimm von der Herdplatte die Milch, sobald diese anfängt zu kochen.
  • Rühre die Mehlmasse in die heiße Milch.
  • Erhitze die Milch-Mehl-Masse erneut und rühre bis eine dickflüssige Masse entsteht.
  • Rühre den Zuckersirup langsam in die dickflüssige Milch-Mehl-Masse.
  • Lass die entstandene Mischung 10 Minuten abkühlen.
  • Rühre die Eigelbe eines nach dem anderen in die lauwarme Mischung. (WICHTIG: Die Mischung darf nicht mehr heiß sein, sonst hast Du Rührei!)
  • Gieße die fertige Creme durch ein Sieb um die Zimtstange, die Streifen der Zitronenschale und kleine Klumpen zu entfernen.
  • Rolle den Blätterteig zu einem Rechteck aus.
  • Rolle ihn von der kurzen Seite her eng zusammen.
  • Schneide die Rolle in 2 cm dicke Scheiben.
  • Lege die Teigscheiben in die Förmchen.
  • Befeuchte Deine Finger mit Wasser.
  • Drücke die Teigscheiben vorsichtig mit Deinen Daumen von innen nach außen an den Rand der Förmchen.
  • Stelle die Förmchen für mindestens 10 Minuten in den Kühlschrank.
  • Nimm die kalten Förmchen aus dem Kühlschrank.
  • Füll diese zu ¾ mit der Creme.
  • Backe die gefüllten Förmchen für 10-12 Minuten bei 250°C.

Ingredients:

300g puff pastry
250g milk
150g sugar
75g water
30g flour
4 egg yolks
3 strips of lemon peel
1 cinnamon stick
½ vanilla pod

Additionally:

pastéis de nata baking tins (alternatively: muffin baking tin)

Instructions:

  • Preheat the oven to 250°C.
  • Mix the sugar and the water in a pot.
  • Heat up the mixture slowly until the sugar is fully dissolved.
  • Let the sugar water boil for 3 minutes until it turns into a thick sugar syrup.
  • Mix the flour with some cold milk and create a lump-free mixture.
  • Bring the remaining milk together with the cinnamon stick, the vanilla and the strips of lemon peel to boil in a pot.
  • Remove from the stove the milk when it begins to boil.
  • Stir the flour mixture into the hot milk.
  • Reheat the milk flour mixture and stir until it turns into a thick mixture.
  • Stir the sugar syrup slowly into the thick milk flour mixture.
  • Let the finished mixture cool down for 10 minutes.
  • Add the egg yolks one by one in the lukewarm mixture. (NOTE: The mixture should not be hot, otherwise you get scrambled eggs!)
  • Pour the finished cream through a sieve to remove the cinnamon stick, the strips of lemon peel and small lumps.
  • Roll out the puff pastry and form a rectangle.
  • Roll it up from the short side.
  • Cut the role into slices with a thickness of 2 cm.
  • Place the dough slices in the baking tins.
  • Wet your thumbs with water.
  • Push and spread the dough slices carefully with your thumbs from the center to the edges of the baking tins.
  • Place the baking tins in the fridge for at least 10 minutes.
  • Take the cooled baking tins out of the fridge.
  • Fill these to about ¾ with the cream.
  • Bake the filled baking tins for 10-12 minutes at 250°C.
